Happy Monday to you dolls…. how was your weekend? I had a really relaxing Friday night followed by a busy Saturday! Sunday Funday included cooking for some friends 🙂 Unfortunately, I didn’t take any pictures….. but we had baked tortellini, salad and garlic bread – YUM!

Last week, Erin asked that I share some smoothie recipes with ya’ll. As of late I have been drinking A LOT of smoothies/protein shakes. They are quick & easy… no excuse to be skipping breakfast or any meal for that matter when you can whip up a smoothie in 5 minutes stat. 🙂

My go-to Smoothie has been a chocolate concoction….. I need to wean myself off for a bit or else I’m going to burn out on it.

The key to my smoothies are Frozen Bananas. ….they are my secret weapon.

You must peel the banana. Break in half. Insert into freezer bag. Store in Freezer. Grab for Smoothie.

DO NOT and I repeat DO NOT just put a banana in the freezer with the peel still on. You will have a mess. It’s much easier to just peel and plop right up front.

Also, it does help to have a pretty heavy duty blender to whip the banana into ice cream form.

Just look at that milk shake/smoothie 🙂

  • 1 cup almond milk
  • 1/2 banana
  • 1 scoop protein powder
  • 1 t cocoa powder
  • 1 T PB2 or regular Peanut Butter
  • 3-4 cubes of ice

I decided to switch it up a bit this morning and ease my way off the chocolate.

So instead of banana chocolate, I went for a banana nutmeg smoothie.

  • 1/2 banana
  • 1 cup almond milk
  • dash of nutmeg
  • PB2
  • Protein Powder (vanilla)
  • sprinkle of nutmeg on top

It felt like a cool Autumn morning in Ohio today…. and the hint on nutmeg reminded me of home too 🙂

This smoothie was delicious….. try it!

Each day this week I will post a new smoothie recipe- be prepared I have some good ones!

Good Morning Dolls.

I had an excellent evening, last night with friends, food & spirits….. well just one spirit for me. I am bound and determined to cut  alcohol out of my diet for the next 30 days. However, I love Jameson (my brother was almost named Jameson) so of course I had to have what American’s call…..theee Irish Car Bomb 🙂 Guinness, Bailey’s & Jameson. It’s like chocolate milk and usually I consume more than 5 on St. Pat’s…. but not this year! Cheers to growing up. Sort of.

We still get crazy…

And while we enjoy spirits…like Irish Coffee. (okay so I had a sip) it had whipped cream on it – I couldn’t resist.

We STILL make Delicious food to go along with those spirits.

Irish Soda Bread anyone??? Yum.

Betsy made dinner for all of us. She is pictured above with the crock o soup! The soup was a little more dense than vegetable soup, but nothing short of amazing! Thanks McBets!

H A P P Y S T. P A T R I C K’ S D A Y

I have a busy night ahead of me. I also had a busy night last night- first let me share with you a present I received from the ‘world’s best aunt’

I was squealing with Delight when I got this scale in the mail 🙂

I have wanted a food processor and a scale for years- and this year both of those wishes were granted by my generous familia.

I used the scale to whip up Tuesday’s dinner- spaghetti and meatless meatballs.


Last nights meal was a bit of a concoction…. on very little time because I had to rush back to work at 6:45.

However, I had one meal on my mind and I’m the type of person that when I get something in my head I have to have it. It has and always will drive my mother nuts….I am relentless – I’m telling you 🙂

So with about 30 minutes to spare- I busted out the food processor and made a delicious Almond Sauce.

To say that I am a condiment lover is an understatement. I’ve actually been coined a “condiment whore” which is guess is better than just the latter. 🙂

I came across Katie’s post yesterday which sparked my thoughts about this meal- however she made a cashew sauce. I only had almonds so I worked with what I had and it was nothing short of amazing.

I really didn’t follow much of a recipe, but I will give you the splash of ‘this and that’ version:

1 T of Olive Oil

a dash of sesame oil

1 T of minced garlic

3 T of Almond Milk…and a couple pours to get a smoother consistency

Pulse in food processor until creamy. spread over ENTIRE meal!

Halibut sprinkled in Sea Salt- which I forgot til I took a bite. This was the convo I had while noshing on my fish…. “Is this Halibut -Butter Infused?” OMG it’s so good? Crap what’s the calorie count then??? Oh WAIT… I sprinkled it with Sea Salt… that’s what it is 🙂 It’s not butter infused, I just dashed some Sea Salt on it… Whew!  I never use salt or extra salt to salt my food, so the taste was semi foreign to me…only because my salt intake has been considerably low the last several months-  but HOLY it was delicious dolls.

Especially drizzled in the Almond Sauce.

I know right? Can you believe it? I roasted some garlic broccoli- go me!

And there you have it dolls… a less than 30 minute meal. Take that Rachel Ray! This was one saucy….but healthy fish dinner.


Do you eat fish? If so how many times a week do you eat it?

I try to eat it as much as I can, but it’s never the recommended 3 x’s a week. Maybe that should be a goal?

All About Me…

But when isn’t it all about me? HA kidding. sort of.

Ok, I’ve seen this floating around many of the blogs I read and initially decided that I wouldn’t do it, but I wanted to have a post up today and I forgot my camera at home….so I can’t upload the recipe I had planned for today’s post. I will share tomorrow though. For now, here’s the honest truth about ME.

A. Age: 29

B. Bed size: Queen, and I hate it.  It was such an expensive mattress and unfortunately it just doesn’t agree with my back some months. Dream Mattress: Serta Perfect Sleeper Mattress

C. Chore you dislike: I love to have a clean house, but my least favorite chore is scrubbing floors. I get down on all fours and scrub every week. I’m OCD. I cannot stand to have crumbs touch the bottom of my bare feet. Disgust

D. Dogs: This is funny if you know me.  I want a Teacup Yorkie and I would name her Coco Madamoiselle, but I also like Weimaraners …. his name would be Pepe Le Pew. However, I don’t do dogs. I don’t want anything bad to happen to them I just don’t want them to touch me. Go ahead… judge me. …I don’t care. I’m nice to dogs- just ask my friend Kelly (the Boston Terrier and all DOG lover) I have a bad back and if you read question C. you know I’d never let dog hair sit around on my floors or furniture (gasp)

E. Essential start to your day: Workout. Eat Breakfast.  Always breakfast. Food is the first thing on my mind, but I wait til the workout is over! 3rd… Morning Express with Robin Meade on CNN. Current Events People…get with it.

H. Height: 5 foot, 6 inches and a 1/2 if you want to get technical.

I. Instruments you play(ed): Piano and of course the fluteaphone. Never stuck with lessons though… but man I could rock out with the flutaphone in 4th grade.

V. Vegetables you don’t like: I have to sneak my veggies in my meals like a small child most days. I’m not that big on them, but I eat them when others prepare them for me. Guess that’s the princess in me.

X. X-rays you’ve had: Ribs, when I flipped my go-cart …yes I raced go-carts I would have been the next Danica Patrick, but my dad never fixed my ride. I have scoliosis, so my back too!

Z. Zoo animal favorites:  I don’t really care for animals that much. However, the Shedd Aquarium in Chicago is my favorite….despite the smelly millions of people that go each day.

How was your Monday? I’m sure we all finished our nights in front of the tube watching who Brad would choose on the Bachelor? I was team E M I L Y for sure – however, I was hoping they would give me at least a glimpse of this working out 😦 Sad to say- I think its a doozey. Big age difference don’t you think? Anway….

I wanted so badly to run today, but when I got to the gym I realized my I Pod was dead. I can’t run without jams… the thought is miserable to me. I tried to get a treadmill that has a  TV, but the sole one at the gym didn’t work. So elliptical it was! I was sweaty and I hit all of my 10s so it was High Intensity- just like I like 🙂

I was actually in Duluth this weekend for a girls getaway. Some of my crazy friends did a polar plunge. Outfits are mandatory for this event 🙂 I don’t know why Minnesotans like to jump in the lake during winter, but these polar plunges are everywhere. Most for Charity. This one was for kicks…. who knows? I doubt I will ever do this… but never say never.

I got my rush on eating THEE most amazing omelet I have ever eaten in my life. That’s a big statement to make, but I’m not kidding.

My best doll- Penny and I split the omelet – next time I’ll probably get my own.

Not kidding this breakfast was to. die. for. I tried to recreate it at home, but it was missing something? I see now from the picture…. I forgot to add Kalamata olives- big mistake- it is a Mediterranean staple 🙂

So I guess, I’ll have to try again another morning!

ya’ll know I love love love St. Pat’s Day- and from One Irish Princess to another (possibly not Irish just a princess or prince for the male readers) I promise… my lipstick is not as hideous as it looks in that photo. It is not even close to the real life color! Not sure about the flash this a.m…. but I can tell you it quickly faded to a GREEN lip color after I took down breakfast 🙂 Can you guys see my invisilign trays? I’m KISSING those suckers goodbye after this week- THANK Goodness! I am back in business with straight teeth and permanent retainers (to wear at night) on the way!

PS- thanks to my friend Emily who couldn’t pass up this Irish Princess Crown when she saw it. Such a perfect gift for me. mmmwha I’ll wear it proudly Em 🙂

Ok- enough of this morning. Let’s talk about the delicious treat I whipped up to kick off St. Pat’s Day “week”

In honor of St. Pat I wanted to include my good friend Bailey in most of daily activities this week. (just kidding) sort of.

So why not add a little Irish cream to your favorite brownie?!?

Fudge Brownies of course….

1 (1 lb. 3.8-oz.) pkg. fudge brownie mix
1/2 cup oil
1/4 cup Irish cream liqueur
2 eggs

Oh I’m sorry were you looking for a picture of the brownie batter?

I’m not sure where that picture went? Nor do I know where the batter went?

Once you’ve baked the brownies. Let cool.

Whip up the frosting

1/2 cup butter or margarine, softened
2 cups powdered sugar
2 tablespoons Irish cream liqueur
1/2 teaspoon vanilla
2 to 3 teaspoons milk

1 oz. semisweet chocolate, chopped
1 teaspoon butter or margarine

This is an easy way to spread chocolate into a ‘Piping’ bag.

Drizzle Chocolate over top the brownies and refrigerate.


I’m going to go ahead and warn you. Betty Crocker was not messing around when she came up with this recipe. You will not JUST be able to eat one of these. I’ve never had such a creamy texture in my mouth. Seriously, butt(ah) smooth. These slide right down the hatch. I had three possibly four and reminded myself I am trying to get that Body For Life 🙂 haha.

I couldn’t have asked for a better recipe to kick off my favorite week 🙂 Go ahead and make these before Thursday. Those in your presence couldn’t be L U C K I E R all day than to receive this treat from you.

Do you celebrate St. Patrick’s Day?

Hi Dolls…
I had a busy weekend….but it was an absolute blast!….. Saturday some friends got together for a BBQ (indoors of course) and it was phenomenal. I forgot my camera, but don’t fear. IDD’s dedicated reader and assistant to the blogger helped out with her IPhone. 🙂 I will update tomorrow once I get all the pictures…. promise.

Here is what I do have pictures of. My dish that I brought to the BBQ.

Peanut Butter cookies.

Did I mention 3 ingredient Peanut Butter cookies?

  • 1 cup creamy Peanut Butter
  • 1 egg
  • 1 cup sugar

Bake at 350 for 10 minutes, I baked them for 15 or so.

Of course you can add chocolate chips and peanut butter chips to the mix too 🙂 More peanut butter is always a good thing, right?!?!

i don’t have any pictures of the final product…. but I think, I think Kelly does? So stay tuned. I’m sure you can imagine what they looked like, but I will double check.
