Do you ever just get on a kick (of something) and you can’t stop? Well I can’t keep enough, flour, butter or eggs on hand! I’ve been such a BETTY the past 2 days! 24 hours later and I’m still baking 🙂 It’s therapeutic for me, really!
Yesterday, I baked up some “baked oatmeal” courtesy of the best aunt in the world 🙂 Here is my Aunt Cindy’s baked oatmeal recipe (modified) to be healthier!
- 1/2 cup applesauce
- 1 cup sugar Splenda
- 2 eggs
- 3 cups Oats
- 2 tbsp Flaxseed
- 4 tbsp Hemp Protein Powder
- 1 tsp baking powder
- 1 tsp salt brown sugar
- 1 tsp vanilla
- 1 cup milk Almond Milk
Bake in an 8X8 pan at 350 for 30 minutes!
Perfect- I have a head start on breakfast for next week 🙂 Thanks Aunt Cindy, I can’t wait to dive into this baby!

Mini Apple Pies
Make a double batch of a 9″ Pie Crust Recipe.
My Recipe:
- 1 C sifted all-purpose flour
- 1/2 t salt
- 1/3 C shortening
- 3 T cold Water
- 2 t white sugar
~sift flour, salt & sugar together
~cut shortening with pastry blender until looks like small peas
~sprinkle water over mixture, while tossing with fork, until dough sticks together
~form into a ball, wrap in wax paper, and put in fridge to chill (1 hour)
~take out and roll out on floured surface
To make the mini apple pies, you’ll need a 3 inch cookie cutter- mine was only 2″ so I used a glass 🙂
Cut out 20 rounds from doubled batch of pie crust (only 1, 9″ pie crust recipe listed above -you must double it)
For the apple pie filling:
- 3 small granny smith apples, peeled and cubed (I used BraeburnApples)
- 1 1/2 tbsp all-purpose flour
- 1/3 cup granulated sugar
- 1/4 tsp ground cinnamon
Egg Wash:
- 1 egg
- dash of water
Sugar for dusting 🙂 mmwha.
- In a small bowl, mix the cubed apples, flour, sugar, and cinnamon until each apple is coated. Set aside.
- Roll out dough, cut 20 or so rounds from the dough. (divided)
- Scoop 1/2 tbsp apple mixture into center of 10 rounds.
- Using your finger dab egg wash around the circle of each round.
- Take the other 10 rounds and create a top to complete the pie. Press along edges of pie with fork prongs.
- Baste each pie with egg wash.
- Sprinkle with sugar.
- Bake at 350 for 15-20 minutes.
You can also drizzle icing on each pie if desired.
The best part- I have some apple mix left over, which will be blended up into a smoothie later!

Blueberry Lemon Muffins
- 2 cups flour
- 1/2 cup sugar
- 3 tsp baking powder
- 1/2 tsp salt
- zest of one lemon
- 1 egg
- 1 cup milk
- 1/2 cup softened shortening or butter (I used butter)
1 cup frozen blueberries
Topping
1/4 cup butter, melted
1/2 T lemon juice
1/2 cup sugar
Mix dry ingredients and set aside. Beat eggs, milk and shortening (or butter). Add dry ingredients and stir to combine. Stir in blueberries gently. Bake at 375 degrees for 20-25 minutes. Combine butter and lemon juice for the topping. While the muffins are still warm, dip the tops in the butter and lemon juice, then dip in sugar. Makes 12 muffins.
I made a couple of mini muffins for me to taste 🙂 Dipped in that gooey, buttery sugar topping. OMG.I.Die.
Seriously, the hint of lemon mixed with blueberry is unbelievable! Bake these for your next brunch 🙂 They are decadent and they will be all the rave!

let’s talk about this creme brulee for a minute….(this is what everyone else chose)
the sweet creamy pillowy treat danced on my taste buds making me want to skip the spoon and lick the bowl clean with my bare tongue…I came to though….thankfully that didn’t happen 🙂
When the waitress came around to take our dessert order, our friend Tim said…I’ll take a chocolate martini…his wife said “That’s not on the menu…you want a creme brulee, right?” Tim said, “Oh yah, I’ll take one of those too!”
LOL
We each got a taste of this chocolate treasure 🙂 Holy Yum!
